2 tbl avocado oil
1/4 cup cubanelle pepper
1 tbl jalapeño peppers micro diced
2 tbl minced shallots
2 tbl green onions
2 tbl chopped cilantro
1/4 cup diced tomato
1 Tsp tomato paste
1.5 cups low sodium vegetable stock
1/2 tsp Smoked paprika
1 tsp Cumin
1/2 tsp Onion powder
1/2 tsp Garlic powder
1/2 tsp Adobo spice
1/2 tsp Thyme
1/2 tsp Black pepper
1/2 tsp brown sugar
1/2 tsp Himalayan salt

Heat the avocado oil in a pan over medium heat.

Add the minced shallots, cubanelle pepper, jalapeño peppers, and green onions to the pan and sauté until softened.

Stir in the diced tomato and tomato paste, cooking for a few minutes.

Add the pinto beans and low sodium vegetable stock to the mixture.

Season with smoked paprika, cumin, onion powder, garlic powder, adobo spice, thyme, black pepper, brown sugar, and Himalayan salt.
