Roast the green and red peppers over an open flame until the surface is covered in blisters.
Transfer the roasted peppers into a plastic bag and close it to steam for easy peeling.
Remove the seeds from the peppers and cut them into long medium strips.
Heat 3-4 tablespoons of olive oil in a skillet over medium-high heat.
Add 2 crushed garlic cloves and the roasted peppers to the skillet and fry for 5-7 minutes.
Add the chopped tomatoes (seeds removed) and cut into big pieces, stir-frying for 2-3 minutes.
Season with half a tablespoon of salt, 1/4 teaspoon of black pepper, half a tablespoon of paprika, half a tablespoon of cumin, and 1/4 teaspoon of chili powder.
Add 1.5 tablespoons of thinly chopped fresh cilantro and stir well.
Cover the skillet, reduce the heat to low, and cook for 10 minutes.
Remove the cover and gently mash any large pieces, adjusting salt to taste.
Let it reduce until most of the water is evaporated if not cooking a main dish at the same time.
