Sweet potatoes offer more nutrients and fiber.
Start with new potatoes or baby potatoes and place them in cold water.
Add fine sea salt to the cold water, heavily salting it.
Bring the salted water to a boil and parboil the potatoes for around 10 to 15 minutes until they are tender but not fully cooked.
Prepare a spice mix with smoked paprika, garlic granules, onion granules, Italian herb seasoning, mustard powder, salt, and black pepper.
Add about 2 and 1/2 tablespoons of olive oil to the spice mix to create a paste.
Once the potatoes are parboiled, drain them and smash them slightly with a fork or your hand.
Coat each smashed potato with the spice paste, ensuring both sides are covered.
Prepare a quick pickle by slicing banana shallots into rings and placing them in a pot.
Add about 150 to 200 ml of white wine vinegar, 2 and a half tablespoons of sugar, whole black peppercorns, and about 150 to 200 ml of water to the pot with the shallots.
Bring the mixture to a boil and let it cool slightly before adding the shallots to the pot.
Let the shallots sit in the pickle until needed, ideally for about half an hour.
