2 tablespoons olive oil
2 banana shallots, chopped
2 tablespoons white wine vinegar
1 teaspoon sugar
1 cup water

Start with new potatoes or baby potatoes and place them in cold water.

Add fine sea salt to the cold water, heavily salting it.

Bring the salted water to a boil and parboil the potatoes for around 10 to 15 minutes until they are tender but not fully cooked.

Add about 150 to 200 ml of white wine vinegar, 2 and a half tablespoons of sugar, whole black peppercorns, and about 150 to 200 ml of water to the pot with the shallots.

Bring the mixture to a boil and let it cool slightly before adding the shallots to the pot.

Let the shallots sit in the pickle until needed, ideally for about half an hour.
