1 tsp baking soda
4-5 Tbsp oil
1 onion, diced
1-2 cloves garlic, chopped fine

Add the salt and baking soda to the water and boil.

Peel and cut potatoes into wedges.

Add the potato wedges to the boiling water and cook for about 10 minutes or until the sides of the potatoes start to get soft.

Meanwhile, add 4-5 Tbsps oil to a frying pan along with the chopped onion, garlic and rosemary. Cook them until they are slightly browned and remove from heat.

Drain the potatoes and place into a bowl. Pour the frying pan oil into the bowl with the wedges, reserving the onion, garlic and rosemary for later.

Toss the potatoes and oil together. The potatoes should start to look mushy on the outside.

Bake for 20 minutes on a lined baking sheet that has been oiled, flip the potatoes and bake for another 20 or until they are to your liking.

Sprinkle the onions, garlic and rosemary on before serving. Top with salt, pepper and green onion.
