Wash and rinse the potatoes well.
Cut each potato in half, then cut each half into 3 to 4 wedges, keeping the wedges less than half an inch thick.
Soak the potato wedges in cold water for 15 to 20 minutes (optional, can add ice to the water).
Drain the soaked potatoes and pat them dry with a paper towel to remove extra moisture.
Place the potato wedges in a large bowl and add olive oil, paprika, garlic powder, onion powder, grated parmesan cheese, salt, and black pepper to taste.
Mix the potatoes with your hands, ensuring they are well coated with oil and spices, scraping the bottom of the bowl.
Arrange the potato wedges on a baking sheet lined with parchment paper or aluminum foil, ensuring they are not too close together to avoid steaming.
Bake in a preheated oven at 450°F for about 15 to 20 minutes until the underside is starting to get golden brown.
Flip the wedges over and bake for another 10 to 15 minutes until tender on the inside and golden brown on the outside.
Serve immediately, optionally garnished with more parsley or parmesan cheese, and with condiments like ketchup or ranch dressing.
