Unfold the puff pastry from the freezer section.
Roll out the puff pastry gently with a rolling pin to about 9x10 inches (22x25 cm).
Spread 2 tablespoons of Dijon mustard evenly over the puff pastry, leaving a little border at the edges.
Layer 4 to 6 slices of Virginia ham over the mustard, overlapping slightly as needed.
Sprinkle 3 oz (85 g) of shredded sharp cheese evenly on top of the ham.
Sprinkle 2 tablespoons of chopped fresh chives over the cheese.
Starting from the side closest to you, roll the pastry tightly into a log.
Wrap the rolled pastry in plastic wrap and refrigerate for 20 minutes to firm it up.
After 20 minutes, unwrap the pastry and slice it into about 12 slices using a serrated knife.
Line a sheet pan with parchment paper and place the slices cut side up on the pan.
Beat 2 eggs with a splash of water to create an egg wash, then brush it over the tops of the pinwheels.
Bake in the oven at 375°F (190°C) for about 15 to 20 minutes or until golden brown.
Let the pinwheels rest for about 5 minutes after baking before serving.
