1

Go to the garden and pick a couple of sweet peppers.

2

Wash the sweet peppers and soak them in a vinegar bath made with 1/3 cup distilled white vinegar for a few minutes.

3

Cut the tops and bottoms off the peppers, remove seeds, and slice them into rings about 1/2 inch thick.

4

In a Ziploc bag, combine 1 cup all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/3 cup corn starch. Mix well.

5

Optionally, add 1 tablespoon of sugar to the dry mix for sweetness.

6

Add the sweet pepper rings to the Ziploc bag, seal it, and shake to coat the rings with the dry mixture. Let sit for 15-20 minutes.

7

Prepare the wet mix by beating 2 eggs and adding 1 1/2 cups of buttermilk, mixing well.

8

After 20 minutes, remove the pepper rings from the Ziploc bag and shake off excess flour. Add the remaining flour mix to the wet mix and stir.

9

Check the oil temperature in a cast iron skillet, ensuring it is hot enough by dropping in a bit of batter to see if it bubbles.

10

Dip the pepper rings into the wet mix and then carefully drop them into the hot oil to fry. Monitor the frying process, flipping them as needed.
