Prepare the Weber Smokey Joe Grill with a galvanized feed pan underneath.

Start the charcoal in a chimney.

Cover the Dutch oven with its lid and place charcoal on top and around the bottom of the pot for baking.

Wait for the chicken to cook without lifting the lid to maintain temperature.

Prepare a second Dutch oven for cornbread by greasing it and letting it heat up for 10-15 minutes before adding the cornbread batter.
