Wash the beets in the sink, cutting off the tops while leaving the roots intact to minimize bleeding.
Steam the beets until the skin can be easily pushed off, which takes about 3 hours.
Check the beets periodically to see if the skin comes off easily; if it does, they are done.
Once cooked, remove the skin by pushing on it so it slides off easily.
Cut the beets into slices, keeping the color intact due to minimal bleeding.
In a pot, combine water, vinegar, salt, and sugar, heating until the sugar dissolves and bubbles form.
Once the mixture is bubbling, remove it from heat.
Pour the hot mixture over the sliced beets in jars, leaving them uncovered until cooled.
Once cooled, seal the jars with plastic tops or lids and refrigerate until use.
After about a week, taste test the pickled beets.
