Cut the ends off the beets.

Wash the beets thoroughly.

Put the beets into a pot and fill it with water, ensuring the water level is higher than the beets.

Boil the beets for 1 hour on heat setting 8 out of 10.

Strain the water from the pot after an hour.

Wait 10 minutes for the beets to cool down.

Peel all of the beets thoroughly.

Cut the beets into half-inch slices.

Place all of the beet slices into a jar.

Add white vinegar to the jar, ensuring the vinegar level is higher than all other items inside the jar.

Cover the jar and place it in the fridge for at least 1 week before using.
