Dried herbs are often more cost-effective.
Boil the new potatoes in water for about 5-6 minutes until fork-tender.
Cut up 6 pieces of bacon and cook them in a skillet, leaving some grease in the pan.
Add a medium red onion to the pan to soften for a couple of minutes.
Remove the onions and set them aside with the bacon.
Cool the boiled potatoes for a few minutes, then cut them into pieces for more surface area.
Add butter and olive oil to the skillet with the bacon grease.
Place the cut potatoes in the skillet, ensuring at least one side is touching the skillet.
Cook the potatoes until they get a nice color, flipping them to get color on all sides.
Add the cooked onions and bacon back into the skillet with the potatoes.
Season with kosher salt, fresh ground pepper, smoked paprika, and garlic powder.
Finish with a handful of curly parsley before serving.
