Easy Skillet Potatoes

Place the potatoes in a pot and cover with cold water. Season with a teaspoon of salt and bring to a boil.
Cook the potatoes until fork tender. Drain and cut the potatoes in half if they're small or into cubes.
Heat the oil or butter in a skillet over medium heat.
Add the potatoes and season with salt and pepper. Cook them until golden on all sides.
Add the scallions and cook for 2-3 minutes and then add the herbs.
Remove from the heat and serve.
