Add 3 quarts of Øland wheat flour to a large bowl.
Add 1.5 cups of regular white flour to the bowl.
Pour in 1.5 cups of water.
Add 1 tablespoon of yeast to the water and mix it slightly.
Add 0.5 tablespoon of salt and 1.5 tablespoons of honey to the water.
Mix everything together for about 1 minute.
Let the mixture rest for about 12 minutes to combine.
Knead the dough by hand until it is smooth and firm.
Place the dough in a bowl and refrigerate for 10-12 hours.
After refrigeration, let the dough sit at room temperature for about 1 hour before continuing.
Shape the dough and place it in a baking pan that has been greased with butter.
Let the dough rise for 2 hours.
Preheat the oven to 425°F (220°C).
Bake the bread for 35 minutes until golden brown.
Remove the bread from the oven and let it cool before slicing.
