⅓ cup azuki beans
1 ½ cup water (for cooking beans #1)
3 ½ cup water (for cooking beans #2)
2 ¼ cups sweet rice/glutinous rice (mochigome)
½ tsp kosher/sea salt (for cooking rice)
1 Tbsp toasted black sesame seeds (or use gomashio)
½ tsp kosher/sea salt (for serving)

Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 6 hours or overnight.

In a pot, add the soaked adzuki beans and cover with water. Bring to a boil, then reduce heat and simmer for about 30 minutes until the beans are tender. Drain and set aside.

In a large pot or rice cooker, combine the soaked glutinous rice, cooked adzuki beans, 3 cups of water, and salt. If using kombu, add it to the pot as well.

If using a rice cooker, set it to the 'white rice' setting and start cooking. If using a pot, bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and water is absorbed.

Once cooked, remove from heat and let it sit covered for an additional 10 minutes to steam.

Fluff the rice and beans mixture with a fork, removing the kombu if used.

Transfer the sekihan to a serving dish and sprinkle with sesame seeds for garnish.

Serve warm or at room temperature.
