1 lemon
1 cup carrot

1/4 teaspoon saffron
2 cups paella rice
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup extra virgin olive oil

Cut the chicken into small pieces, then start with all the vegetable prep. Cut the peppers into small cubes & the leek and carrot.

Get the Paella pan nice and hot with a generous amount of extra virgin olive oil.

Press down on the garlic bulbs to open them up a bit, put it in the pan to start releasing the flavour.

While the garlic is cooking, prepare the prawns by squeezing some lemon juice over them and adding chopped parsley, salt, and pepper, then leave to marinate.

Put the chicken in the pan and let it cook through.

Once cooked, add all the prepared vegetables, stir, and add salt and pepper.

Prepare the saffron by placing it in warm water to bring out the flavour, then add it to the paella.

Add the rice and pour in enough hot water to just cover the food.

As the water cooks down, add the prawns and cook for 5-10 minutes, adding extra lemon juice if desired.
