Boiled and Fried Provisions

This dish celebrates the local produce, particularly root vegetables, and reflects the resourcefulness of Jamaican cooking. Today, it is commonly served with various meats or enjoyed on its own, showcasing the vibrant flavors of the Caribbean.

Peel and cut the green plantain and sweet potato.
Place the sweet potato in water to prevent it from browning.
Boil water in a pot and add the green plantain, sweet potato, and edeto.
Add 1 and 1/2 tbsp garlic salt to the boiling water.
Cook until the provisions are tender, then strain them.
Heat oil in a pot and add butter.
Add onion, red pepper, yellow pepper, green pepper, and tomato to the pot and cook for 2-3 minutes.
Add more butter to prevent the provisions from being dry.
Add garlic powder, seasoning salt, Cajun seasoning, and black pepper to the mixture.
Add the boiled provisions to the pot and fry everything together.
