Remove chicken and set aside; add soaked rice to the pot.
Stir in raisins and enough water to cover the rice by 1 inch; bring to a boil.
Reduce heat, cover, and cook until rice is tender, about 20 minutes.
Fluff rice with a fork and serve topped with chicken and toasted almonds.
