Start by preparing your paella pan. Boil water in it for about half an hour to scrub off any oils from manufacturing.

Dry the pan with a paper towel, apply oil to the outside, wrap it in paper, and store it to prevent rust.

Turn on the heat under the paella pan and add about 2 tablespoons of olive oil, letting it warm up.

Add 4 pieces of boneless chicken thighs cut into pieces and sauté for a few minutes until they start to smell good.

Add 2 links of pork sausage, diced red peppers, onions, and frozen peas. Stir to combine.

Add spices: bay leaves, fresh thyme, Spanish paprika, and 1 tablespoon of saffron, crushing the saffron slightly before adding.

Add 1 can of diced tomatoes (do not drain the juice) and cook for a couple of minutes.

Stir in 3 cups of arborio rice, ensuring it is coated with the oil and spices.

Heat 48 ounces of chicken stock until hot but not boiling, then add it to the rice mixture.

Add 1/2 cup of lemon juice and chopped parsley, stirring to combine.

Cook for about 15-20 minutes, keeping an eye on the liquid level and scraping any rice that sticks to the bottom of the pan.

If using an electric stove, move the pan around to distribute heat evenly; with gas, this is less necessary.

Two minutes before the rice is done, add clams, mussels, and shrimp on top of the rice without stirring.

Let the paella cook until the seafood is cooked through and the rice is al dente, about 5 minutes more.

Remove from heat and let it rest for a few minutes before serving.
