Finely chop the onions in a food processor or by hand and cut the red pepper into long slices 1/4 inch thick.

In a large pot, place the ham bone, water, garbanzos, salt, garlic powder, saffron, oregano, onions, and red pepper; mix well.

Cover the pot and bring to a boil on high heat.

Once boiling, reduce the heat to medium and let cook for two hours with the lid skewed on top of the pot, stirring occasionally.

After two hours, add in about 2 cups of water, stir, and let cook for another 30 minutes with the pot covered.

Carefully remove the ham from the soup and transfer it to a cutting board; let cool for 1-2 minutes.

Once cool enough to handle, remove the ham meat from the bones, cartilage, and fat; discard these parts and cut the ham into medium or small chunks.

Put the meat back in the soup and warm the soup up if needed before serving.
