Add 375 milliliters of lukewarm water, 60 milliliters of lukewarm milk, and 2 teaspoons of active dry yeast to the bowl of a table top mixer.
Add 1 tablespoon of honey and mix everything together, letting it sit for about 7-8 minutes to activate the yeast.
In another bowl, combine 500 grams of all-purpose flour, 87 grams of fine semolina flour, and 1 teaspoon of salt, whisking together and setting aside.
Once the yeast is activated, add 60 milliliters of olive oil and the flour mixture to the yeast mixture.
Using the dough hook attachment, knead on low speed for about 10 minutes (or 15 minutes by hand).
Grease the mixing bowl with a couple tablespoons of olive oil, toss the dough in it, and cover with plastic wrap.
Let the dough rise in a warm spot until doubled in volume, about 1.5 to 2 hours.
Preheat the oven to 475 degrees Fahrenheit.
Form the dough into a round shape and place it on a baking tray lined with parchment paper.
Cover loosely with plastic wrap and let it rise for another 30-35 minutes.
Brush the dough with water and make slits on top; optionally sprinkle sesame seeds.
Bake in the preheated oven for 30 minutes until golden brown.
Let the bread cool at room temperature for 15-20 minutes before slicing.
