Wash the head of cauliflower and break it into several pieces.
Use a food processor to pulse the cauliflower until it reaches a rice-like consistency (about 4 cups).
Heat a sauté pan over medium-high heat and add the processed cauliflower, cooking for about 3-5 minutes until soft.
Let the cooked cauliflower cool for about 8 minutes.
Place the cooled cauliflower into a bowl lined with a dish towel to drain excess moisture.
Twist the dish towel to extract as much moisture from the cauliflower as possible.
In the drained cauliflower, add the beaten egg, Italian seasoning, granulated garlic, pinch of salt, shredded mozzarella, and optional cornmeal, and mix well.
Shape the mixture into a 12-inch round crust in a greased pizza pan.
Preheat the oven to 400°F (204°C) and bake the crust for about 20 minutes.
On a cookie sheet, drizzle 2 tablespoons of olive oil over the grape tomatoes and sprinkle with a pinch of salt, then roast in the oven for about 20 minutes.
In a sauté pan, melt salted butter and add one clove of garlic, sautéing until translucent and fragrant (about 1 minute).
Remove the cauliflower crust from the oven and let it cool for about 5-6 minutes.
Line the crust with slices of fresh mozzarella cheese.
Drizzle the garlic butter mixture over the cheese.
Top the pizza with the roasted tomatoes, spreading them evenly.
Drizzle a little bit of fresh tomato sauce around the circumference of the pie.
Return the pizza to the oven at 350°F (177°C) for another 10-12 minutes until the cheese is melted.
