Light coconut milk reduces calories and evaporated milk is often cheaper.

Add 500 g (2 and 1/2 cups) of jasmine rice to the rice cooker.

Rinse the rice 3 to 4 times in cold water until the water runs almost clear.

Pour off as much water as possible after rinsing.

Add 400 ml (14 oz) of full fat coconut milk to the rice cooker.

Add 300 ml (11 and 1/2 oz) of water to the rice cooker.

Add 1 teaspoon of sugar and 0.5 teaspoon of salt to the rice cooker.

Stir the mixture once and place the lid on the rice cooker.

Start the rice cooking cycle on the rice cooker.

Once cooked, serve the rice as is or top with shredded toasted coconut, chopped coriander, and lime zest.
