Prepare 1/2 pound of rotini pasta; cook until al dente and cool.

Grill corn on the cob until charred; cut kernels off the cob.

Roast a red pepper on the grill until charred; cover with Saran Wrap to cool, then peel skin and remove seeds.

Make dressing by blending roasted red pepper, fresh garlic, mayonnaise, salt, and black pepper to taste.

Blanch broccoli for 1 minute, then place in an ice bath; drain and refrigerate.

Prepare veggies: julienne yellow and orange peppers, cut scallions into larger pieces, and slice zucchini into half-moon shapes.

In a large bowl, combine cooled pasta, grilled corn, prepared veggies, and dressing; toss to combine.
