Combine salt, sugar, vanilla, melted butter, and yeast into the coconut milk; mix well and set aside.
Add grated coconut to the flour and mix until well combined.
Add the wet ingredients to the flour mixture and mix until a super soft dough forms.
Knead the dough for about 2 minutes until it feels a bit sticky; do not add too much flour.
Cover the dough and place it outside to rise in a warm place until doubled in size.
Once doubled, release the air from the dough and flour your surface.
Cut the dough into three equal pieces.
Roll each piece into a long log shape, adjusting the length based on desired bread size.
Braid the three pieces together by placing one over the other.
Cover the braided dough with a damp paper towel and let it sit for about 30 minutes.
Preheat the oven to 350°F.
Bake the bread for about 25 to 30 minutes until golden brown and fragrant.
Brush the top with melted butter and let it rest for about 10 to 15 minutes on a wire rack before slicing.
