Heat 250 milliliters of buttermilk in the microwave until lukewarm.

Add 25 grams of fresh yeast to the buttermilk and mix with a fork until dissolved.

In a mixing bowl, pour the yeast mixture into the bowl along with 60 grams of white granulated sugar, 4 medium eggs, 0.5 teaspoons of salt, and the zest of half a lemon.

Use a dough hook to knead the mixture on medium speed for about 8 minutes.

Add 100 grams of butter to the dough and knead for an additional 5 minutes on medium speed, then switch to high speed for 2 minutes.

Shape the dough into a round ball and cover it with flour on top.

Let the dough rise until doubled in size, about 1.5 hours.

Once risen, knock the air out of the dough and weigh off pieces of about 80 grams each, yielding approximately 15 pieces.

Shape each piece into a round ball and place them on small squares of baking paper to make transferring easier.

Cover the shaped dough with a bag to keep them moist and let them rise until doubled in size again.

Heat sunflower oil to 180 degrees Celsius for frying.

Fry the doughnuts in batches, gently lowering them into the oil and cooking for about 1 minute on each side until golden brown.
