Heat a little canola oil in a pot.

Add 1 large yellow onion and cook until softened, about halfway, without browning.

Add a couple of pinches of salt, black pepper, and garlic seasoning (Uncle Steve Shake SPG) to the onions.

Stir in 4-5 cloves of minced fresh garlic, being careful not to burn it.

Once the onions are translucent, add 1 quart of tomato sauce and stir.

Bring the tomato sauce to a boil.

Add sweet peppers to the boiling sauce.

Add a pinch of cayenne pepper to the mixture.

Stir in 2 quarts of water and bring to a rolling boil.

Add 4 cups of parboiled rice to the mixture and stir to combine.

Cover the pot with aluminum foil and place it in a smoker set to 350°F.

Bake for 30-35 minutes covered.

Remove from heat and let it rest for a few minutes before fluffing with a fork.
