Add chopped chicken breast and cook until browned on all sides.
Remove chicken and set aside; add chopped onion, minced garlic, and sauté until softened.
Stir in paprika, saffron, and cook for another minute.
Add rice, stirring to coat in the mixture, and cook for 1-2 minutes.
Pour in chicken broth and bring to a boil; reduce heat to low.
Return chicken to the pan, cover, and simmer for 15 minutes.
Arrange shrimp, seafood mix on top of the rice.
Sprinkle peas over the top, cover, and cook for an additional 10 minutes until seafood is cooked through.
Remove from heat and let rest, covered, for 5 minutes.
Garnish with lemon slices and parsley before serving.
