2 pcs. chicken breast
1 medium size white onion
4 cloves garlic
2 tsp paprika
1/3 cup green peas
1 Tbsp fresh lemon juice
pinch of saffron
4 pcs. fresh rosemary stalks
1/2 Tbsp dried parsley
1/4 cup of extra virgin olive oil
salt & ground black pepper to taste
1 lemon
fresh parsley chopped for garnish

Heat olive oil in a large paella pan over medium heat until shimmering.

Add chopped chicken breast and cook until browned on all sides.

Remove chicken and set aside; add chopped onion, minced garlic, and sauté until softened.

Stir in paprika, saffron, and cook for another minute.

Add rice, stirring to coat in the mixture, and cook for 1-2 minutes.

Pour in chicken broth and bring to a boil; reduce heat to low.

Return chicken to the pan, cover, and simmer for 15 minutes.
