Mix 464 g of room temperature water with 16 g of sugar in a bowl.
Add dry yeast to the water and sugar mixture.
In a large mixing bowl, create a basin in 800 g of flour and add 16 g of salt and 40 g of fat (20 g butter and 20 g oil).
Mix the ingredients for 8 minutes on medium speed until the dough forms and passes the gluten window test.
Cover the dough with a doubled over tea towel and let it rest for 15 minutes.
Divide the dough into two portions, about 680 g each.
Dust the surface with flour and shape the dough by folding it into thirds and rolling it into a log.
Place the shaped dough into an oiled bread pan and cover with a tea towel.
Turn the oven to the lowest setting and let the dough rise for 20 minutes before checking on it.
