Instructions
- 1Prepare sushi rice according to package instructions and let cool.
- 2Lay a nori sheet on a bamboo sushi mat, shiny side down.
- 3Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- 4Place slices of eel, avocado, and cucumber in a line across the center of the rice.
- 5Roll the sushi tightly from the bottom using the mat to guide, pressing gently as you go.
- 6Seal the edge with a little water on the nori.
- 7Slice the roll into 6-8 pieces with a sharp knife, wiping the knife between cuts.
- 8Drizzle spicy mayo and sriracha over the top of the roll.
- 9Sprinkle tempura flakes and sesame seeds on top for garnish.
- 10Serve with soy sauce, wasabi, and pickled ginger on the side.

Instructions
- 1Prepare all ingredients by slicing the shrimp, julienning the carrots and cucumber, and cooking the vermicelli noodles according to package instructions.
- 2Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens.
- 3Lay the softened rice paper on a clean surface. In the center, place a small amount of lettuce, followed by a few shrimp slices, vermicelli noodles, carrots, cucumber, mint, and cilantro.
- 4Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top to form a roll. Repeat with the remaining wrappers and filling.
- 5Serve the summer rolls with spicy peanut sauce for dipping.
