Millet Soup

1 cup millet
4 cups vegetable broth
1 medium onion, chopped
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1 cup spinach, chopped

Rinse the millet under cold water and drain.

In a large pot, heat the olive oil over medium heat.

Add the chopped onion, garlic, carrot, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.

Stir in the rinsed millet, dried thyme, salt, and black pepper. Cook for another 2 minutes, stirring frequently.

Pour in the vegetable broth and bring the mixture to a boil.

Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the millet is tender.

Add the chopped spinach to the pot and stir well. Cook for an additional 5 minutes until the spinach is wilted.

Taste and adjust seasoning if necessary.

Serve hot, garnished with fresh herbs if desired.
