Smoked paprika adds depth while cayenne provides heat.

Preheat oven to 420°F (215°C).

Wash and peel sweet potatoes.

Cut sweet potatoes into strips less than half an inch thick resembling fries.

In a large bowl, toss sweet potato strips with 1 tablespoon of extra virgin olive oil until evenly coated.

Add 1 tablespoon of habanero sugar and 1/8 teaspoon of salt to the sweet potatoes and mix well to ensure even seasoning.

Spread sweet potato fries in a single layer on a 9x13 cookie sheet lined with parchment paper or sprayed with oil.

Bake for 20-25 minutes until crispy outside and tender inside.

Remove from the oven and serve immediately.
