Prepare the fruit mix by combining half a cup each of raisins, cranberries, currants, and dehydrated cherries; add spices and mix well.
After one hour, deflate the dough and incorporate the fruit mix by pressing it into the dough without overworking it.
Transfer the dough to a clean surface, shape it into a rectangle, and roll it into a log; place it seam side down in a greased loaf tin.
Wrap the dough with cling film and let it rise for 80 to 90 minutes.
Brush the top with egg wash before baking.
Bake at 350°F for 34 to 35 minutes, then reduce to 325°F and bake for an additional 4 to 5 minutes.
Let the bread sit in the pan for two minutes, then demold and apply butter on top while warm; cool completely before slicing.
