1

Cut chicken breast into cubes and wash it well.

2

Season chicken with onion powder, garlic powder, salt, black pepper, ground cumin, paprika, and oregano; mix well and cover to marinate for at least one hour.

3

Heat a pot over medium-high heat and drizzle in avocado oil to coat the bottom.

4

Add the marinated chicken to the pot and sear for about 3-4 minutes, stirring every 1-2 minutes to brown evenly.

5

Add diced tomato and tomato paste (about 2 tablespoons) to the chicken, mixing well.

6

Add cubed potatoes and sliced carrots to the pot with the chicken.

7

Pour in a little water to help cook the chicken and mix everything together; cover and let it come to a boil.

8

While the chicken is cooking, prepare the beans by cutting onion and bell peppers into large chunks and crushing garlic cloves.

9

Sauté the onion, bell peppers, and garlic in a little oil for about 2-3 minutes.

10

Add cooked pink beans to the pot and let them cook for 1-2 minutes before adding water; rinse canned beans if using.

11

Season the beans with sazon, adobo seasoning, and a tad bit of black pepper; mix well and let it come to a boil, then simmer for 5-10 minutes to reduce the liquid.

12

Return to the chicken; once boiling, taste and adjust seasoning with Norris chicken brown powder and additional spices as needed.

13

Add sliced bell peppers (red, yellow, and orange) and freshly chopped cilantro to the chicken; mix well.

14

Let the chicken finish cooking for about 20-30 minutes, smashing a few potatoes to thicken the sauce as desired.
