Shiitake mushrooms - 6
Garlic - 2/3
Heavy Cream - 1/2 cup
Milk - 1/2 cup
Butter - 1 tbs
Salt as per taste
Black Pepper as per taste
Chilli Powder (optional) - 1 tsp
Flour - 1/2 cup
Grated Parmesan Cheese - 1/2 cup
Udon - 2 portions
Chilli Flakes
Spring Onion

Prepare the mushrooms first cutting the Chestnut mushrooms very finely.

Slice the Shiitake mushrooms thinly.

Chop the Garlic.

Prepare a pot for boiling water for the udon.

Heat a pan and add some oil.

Add the chopped Garlic.

Once the Garlic browns, add the chopped Chestnut Mushroom.

Wait till the chestnut mushrooms release water and the water dries.

Add the sliced Shiitake mushrooms and fry for some time.

Add Butter to the mushrooms.

Once the butter melts, add flour and keep stirring so that the flour doesn't lump together or burn.

Add heavy cream and milk and stir so that the flour is mixed well.

Add the cooked Udon in the sauce mixture.

Add Chilli Powder, Salt and Black Pepper as per your taste.

Once it starts to boil a little, add the grated Parmesan Cheese til it melts.

Switch off the heat once the sauce thickens.

Plate the Udon and garnish with Spring Onions (optional). ENJOY!!
