Separate 5 egg yolks from the whites.
Bring 350 ml milk to a boil.
In a bowl, mix 150 g sugar, 8 g vanilla sugar, 35 g cornstarch, and 2 tablespoons coffee.
Add 150 ml of milk to the coffee mixture.
Carefully pour the coffee mixture into the hot milk while stirring constantly over medium heat.
Bring to a boil; when the first bubbles appear, cook for another 20 seconds and remove from heat.
Allow the mixture to cool to room temperature.
In a separate bowl, beat 5 egg whites with 1 pinch of salt, 8 g of vanilla sugar, and 15 g of cornstarch for 7 minutes.
Fold in 160 g of ground almonds, 1 tsp of cinnamon, and 1 tsp of cocoa into the egg white mixture.
Pour the batter into a prepared cake pan.
Bake at 175 °C for approximately 25 minutes.
Roast 80 g of almond flakes at 150 °C for approximately 10 minutes.
Cut the cake while warm and refrigerate for 4 hours.
Decorate with roasted almond flakes and remaining cream.
