Preheat the oven to 180 degrees Celsius (fan forced).

Chop the greens: tear the leaves off the kale and finely chop the stalks, set aside the baby spinach leaves.

In a large skillet over medium heat, add 1 tablespoon of olive oil, then add the diced onion and crushed garlic. Sauté until translucent, about 5 minutes.

Add the chopped greens to the skillet, a handful at a time, allowing each batch to wilt before adding more. Season with salt as you go.

Once all the greens are wilted and moisture is reduced, transfer them to a bowl and set aside.

Chop the parsley and mint (stems and all) and add to the bowl with the wilted greens.

Add 250 grams of ricotta, 100 grams of crumbled feta, and 2 of the eggs to the bowl (reserve 1 egg for egg wash). Stir to combine, adding cracked pepper to taste.

Open the phyllo pastry and keep it covered with a damp tea towel to prevent drying out. Brush one sheet with melted butter, place a second sheet on top, and brush again with butter.

Cut the layered pastry into 3 long strips. Place a heaping tablespoon of filling at the bottom of each strip.

Fold the pastry over the filling to form a triangle, continuing to fold in a triangle shape down the strip until the end is reached.

Place the triangles on a baking tray and brush the tops with the reserved beaten egg. Sprinkle with sesame seeds.

Bake in the oven for 30 minutes until golden and crispy.
