2 medium Tomatoes (chopped)
1 medium Onion (chopped)
2 heaped tbsp Tomato ketchup
2 fresh Green chillies (chopped)
2 tbsp Coriander leaves (chopped)
Salt to taste (for salsa)
½ small Lemon (juice)
¼ cup Corn kernels (boiled)
1 heaped tbsp Cumin seeds
1 heaped tbsp Coriander seeds
1 tsp Salt (for spice)
1 heaped tbsp Degi red chilli powder
½ tsp Dried Mango powder
1 tsp Dried Oregano
2 tbsp Butter
½ tsp Turmeric powder
300 ml Milk
½ cup Cheese
2 tbsp Corn-starch slurry
1 ½ tsp Chilli Oil (optional)
Oil (for frying)
2 tsp Nacho spice
2 tbsp Mayonnaise
Fresh Coriander leaves (for garnish)

In a bowl, add maize flour, refined flour, whole wheat flour, salt, ginger-garlic water, vinegar, and water. Knead to form a semi-soft dough and let it rest for 10-15 minutes.

Take a medium portion of the dough and roll it thin using a rolling pin. Half cook it on a hot flat pan from both sides, then cut it into strips and triangles.

Heat oil for deep frying and fry the triangles in medium hot oil until golden brown and crispy. Remove on absorbent paper, add nacho spice, and mix well.

For pickled chillies, mix chopped chillies, salt, and vinegar in a bowl and set aside.

For pico de gallo, combine chopped tomatoes, onion, tomato ketchup, green chillies, coriander leaves, salt, lemon juice, corn kernels, and pickled chillies in a bowl. Mix well and set aside.

For nacho spice, dry roast cumin seeds and coriander seeds until fragrant, then mix in degi red chilli powder, dried mango powder, and dried oregano. Grind into a powder and set aside.

For cheese sauce, melt butter in a pan, add turmeric powder, then milk and cheese. Mix until cheese melts, add corn-starch slurry, and cook until semi-thick. Add chilli oil, strain, and set aside.

To assemble nachos, place nachos on a serving plate, top with pico de gallo, grated cheese, mayonnaise, nacho spice, and cheese sauce. Serve immediately.
