Slice the smoked sausage into quarter-inch thick pieces.
Chop the bacon into half-inch thick strips.
Cook the bacon in a Calphalon 7 qt pot over medium-high heat until fat is rendered, about 2-3 minutes.
Add the sliced sausage to the pot and cook until it starts to sweat and release grease, about 2-3 minutes.
Add the chopped onion and sauté until translucent, about 2 minutes.
Add the minced garlic and stir, cooking for about 30 seconds to a minute.
Add the roughly chopped bell pepper and stir to combine.
Sprinkle in garlic powder and stir to incorporate.
Add a large amount of chopped cabbage to the pot, covering the bottom.
Cover the pot and cook on medium-high heat for about 4 minutes until the cabbage wilts.
Add more cabbage as it cooks down, seasoning with remaining spices in thirds.
Stir the cabbage and other ingredients to mix, then cover and cook for another 4-5 minutes, checking for desired tenderness.
