3 tablespoons extra-virgin olive oil
1 1/2 teaspoons sea salt
2 teaspoons fresh ground pepper
3 cups chicken stock
2 teaspoons fresh oregano (or 1/2 teaspoon dried oregano)
2 tablespoons fresh basil (coarsely chopped)
2 teaspoons fresh thyme (or 1/2 teaspoon dried thyme)

Heat oven to 400°F. Prep the tomatoes, pepper, onion, and garlic, then toss with 1 to 2 tablespoon oil in a medium bowl until well coated.
