1.25 cups cheese (Colby, Monterey Jack, and mild cheddar)

Chop a whole onion and add it to a bowl with potatoes.

Open a package of Hill Shire Farm beef smoked sausage and cut it into fairly large chunks, then place them over the potatoes and onions in the bowl.

In a separate bowl, combine 1.5 cups of cold milk with 2 tablespoons of cornstarch and whisk until there are no lumps.

Turn on the burner and heat the milk and cornstarch mixture until it thickens, stirring occasionally.

Add 1/2 teaspoon of Tony Chachere's seasoning, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper to the thickened mixture.
