Heat a large fry pan or stockpot over medium heat.

Add 2 tablespoons of extra virgin olive oil to the pan.

Finely chop 1 small onion and roughly chop 4 cloves of garlic.

Add the chopped onion and garlic to the pan with the hot olive oil and mix continuously for even sautéing.

After about 3 minutes, when the onion is translucent, add 0.5 teaspoon of sweet smoked Spanish paprika, 2 teaspoons of dried oregano, and 1 teaspoon of dried thyme. Mix to coat the garlic and onion with the seasonings.

Add a 14.5 ounce can of tomato sauce and a 14.5 ounce can of diced tomatoes to the pan. Season with sea salt, freshly cracked black pepper, and a pinch of white sugar. Mix until well combined and simmer for a couple of minutes.

After about 5 minutes, when the tomato sauce has thickened, add 2 cups of vegetable broth to the pan. Mix and bring to a boil over high heat.

Once boiling, add 8 ounces of spaghetti to the pan. Stir to coat the spaghetti in the broth, mixing every 1-2 minutes to prevent sticking.

After about 7 minutes, when most of the broth has been absorbed, lower the heat to low medium and cover the pan. Simmer for 2-4 minutes until all the broth is absorbed.

Remove the lid and mix the spaghetti to coat it in the tomato sauce. Add slices of fresh mozzarella in a single layer on top.

Cover the pan again and remove it from heat. Let it sit for 2-3 minutes until the mozzarella is melted.

Finely chop fresh basil leaves and sprinkle them over the pasta before serving.
