Moroccan Eggplant

Prepare a bowl and a mortar and pestle.
Add cilantro, garlic, and salt into the mortar and pestle to make a sauce.
Mix the sauce and transfer it to a bowl.
Add dried harissa, cumin, paprika, thyme, and olive oil (about 1.5 tablespoons) to the sauce and mix well.
Cut the eggplant into long pieces, leaving the skin on for aesthetics.
Rub the sauce onto both sides of the eggplant pieces.
Use a fork to poke holes in the eggplant pieces.
Place the eggplant on parchment paper and put it in the oven.
Bake the eggplant on the bottom flame and switch to the top flame later to ensure even cooking.
