Preheat the oven to 425°F.
Peel 2 pounds of sweet potatoes and slice them into rounds.
Dice the sweet potatoes into half-inch cubes.
Add the diced sweet potato to a mixing bowl.
Season the sweet potato with 2 tablespoons of olive oil, 0.5 teaspoon of ground cumin, 0.5 teaspoon of garlic powder, 0.5 teaspoon of paprika, salt, and pepper to taste.
Stir to mix the seasoning throughout the sweet potato.
Pour the sweet potato onto a baking sheet and spread it out in a single layer.
Roast the sweet potato for 30 to 35 minutes, stirring halfway through.
While the sweet potatoes are roasting, bring a medium pot of water to a boil and add 0.5 cup of rinsed green lentils.
Reduce the heat to a low simmer, cover, and cook for 15 to 20 minutes until tender.
Drain the lentils in a strainer.
Chop 0.25 cup of red onion, 0.25 cup of fresh parsley, and 0.25 cup of fresh cilantro.
Remove the roasted sweet potatoes from the oven and set aside.
In a small mixing bowl, combine 0.25 cup of tahini, 2 tablespoons of Dijon mustard, 1 tablespoon of maple syrup, 1 tablespoon of lemon juice, 3-4 tablespoons of water, 1 minced garlic clove, and salt and pepper to taste to make the dressing.
Whisk the dressing until creamy.
In a serving bowl, combine the roasted sweet potato, cooked lentils, 0.5 cup of dried cranberries, chopped parsley, cilantro, and red onion.
Stir to mix the salad together and pour the dressing on top.
