Rinse the cauliflower under running water.

After 15 minutes, drain the cauliflower and let it cool slightly.
In a bowl, combine 80 g of stale bread, 1 tablespoon of bread crumbs, 2 tablespoons of grated parmesan cheese, chopped parsley, salt, and pepper. Mix well.
In a separate bowl, beat 2 medium eggs with a pinch of salt and pepper.
Dip the cauliflower florets in the egg mixture, then coat them in the breadcrumb mixture, ensuring they are well covered.
Place the coated cauliflower in a baking dish lined with parchment paper.
Add 160 g of bacon to the dish. You can substitute the bacon with ham or speck if preferred.
Add 200 g of diced cheese (dimental) to the dish.
Drizzle with extra virgin olive oil.
Preheat the static oven to 200°C (about 392°F) and bake for 25 minutes, adjusting based on your oven.
Once baked, serve and enjoy.
