Start by preparing a 2.5 kg piece of brisket.
In a small bowl, mix together 0.5 tsp dry ginger, 0.5 tsp black pepper, 1 tbsp paprika, 0.5 tsp cayenne pepper, 1 tbsp salt, 1 tbsp cumin powder, and 3 tbsp brown sugar.
Add 3 tbsp vegetable oil to the spice mixture and mix until it forms a paste.
Rub the marinade all over the brisket, ensuring even coverage and pressing it into the meat.
Cover the brisket and place it in the fridge for around 2 hours (or overnight for better flavor).
Preheat the oven to 200 degrees Celsius (about 392 degrees Fahrenheit).
Place the brisket in a large baking tray and cover it with foil.
Cook the brisket in a wood-fired oven set to 220 degrees Celsius (about 428 degrees Fahrenheit) for about 3 to 4 hours for a slow cook.
While the brisket is cooking, prepare the barbecue sauce by heating 2 tbsp oil in a small saucepan over medium heat.
Add 1 chopped onion and 2 crushed garlic cloves to the saucepan, seasoning with salt and cracked pepper, and sauté until the onions are browned.
Add a shot of bourbon (Jim Beam) to the saucepan, being cautious of flare-ups, and let the alcohol cook off.
Reduce the heat to low and add 1 tbsp Worcestershire sauce, 1 tbsp apple cider vinegar, and 0.5 cup tomato ketchup to the saucepan.
Simmer the sauce for about 10 minutes until it thickens and changes color.
After 3 hours, remove the brisket from the oven and baste the top with the prepared sauce, ensuring a generous covering.
Return the brisket to the oven uncovered for an additional 15 to 30 minutes to allow the sauce to dry and become sticky.
Once cooked, remove the brisket from the oven and let it rest for about 10 minutes before slicing.
Slice the brisket using a sharp thin-bladed knife and serve.
