1

In a medium-sized bowl, whisk together 300 g of bread flour and 1 and 1/2 teaspoons of salt.

2

Add 4 tablespoons of coconut oil and use your fingers to work it into the flour until fully incorporated.

3

Add in 3/4 cup of warm water and stir until a shaggy dough begins to form.

4

Transfer the dough to a lightly floured surface and knead until a smooth dough ball forms, which may take up to 5 minutes.

5

If the dough feels too sticky, add a bit more flour as needed.

6

Divide the dough into eight equal pieces, using a kitchen scale if desired.

7

Roll each piece into a ball and cover the dough balls to let them rest for 30 minutes.

8

Once the dough has rested, take one ball at a time and roll it out into an 8 to 10 inch round, rolling, rotating, and rolling again from the center to ensure an even shape.

9

Cook the rolled tortillas in a preheated pan or cast iron skillet without adding oil for about 30 seconds on each side.

10

Flip the tortilla when bubbles start to form on the surface to cook the other side.

11

After cooking, wrap the tortillas in a clean cloth or towel to keep them warm and soft until ready to eat.
