Veggie Chilli

Slice sweet potatoes.

Add olive oil to the pan, then season with salt, pepper, and cayenne pepper.

Add a pinch of cinnamon and cumin to the pan.

Roughly chop one onion and add it to the pan.

Add two cloves of garlic to the pan.

Chop and add a yellow pepper to the pan.

Add a little cayenne pepper, a pinch of cinnamon, and cumin to the veggies in the pan.

Finely slice coriander stalks and add them to the pan.

Finely slice two chilies and add them to the pan, leaving the seeds in for more heat.

Add two tins of kidney beans to the pan and stir.

Add two tins of plum tomatoes to the pan and top up with water.

Simmer the mixture for 25-30 minutes.

After simmering, check the chili; it should have reduced by a third.

Remove the roasted sweet potatoes from the oven and stir them into the chili.

Chop some fresh coriander and stir it into the chili.

Serve the chili with rice, topped with yogurt, coriander, and chili, and add avocado.
