2 cups Tomato Passata
3 cans of Beans
1 small Sweet Potato
2 Peppers
1 medium/large Onion
1 medium/large Carrot
2 ribs of Celery
3-4 cloves of Garlic
2 tbsp Paprika
2 tbsp Cumin
2 tbsp Chilli Powder
1/2 tsp Salt
1/2 tsp Sugar
1/4 tsp Black Pepper
2 tbsp Coriander/Cilantro

In a large pot over medium-high heat, add a drizzle of olive oil along with the onion, carrot, celery, and peppers. Fry until they begin to soften and take on color.

Lower heat to medium and fry the garlic for another minute.

Pour in passata and vegetable stock, then add in sweet potato, beans, chilli powder, paprika, cumin, salt, sugar, and pepper. Stir well.

Simmer until the sauce thickens and the sweet potato is cooked through, around 30-40 minutes.

If the sauce reduces too much before the sweet potato cooks, add more stock or water.

Stir through coriander/cilantro and taste test for seasoning, adjusting with chilli powder, salt, and sugar if needed.

Serve with your favorite toppings.
