Combine 8 and a third ounces of all-purpose flour, 1 tablespoon of sugar, and 1 teaspoon of rapid rise yeast in a food processor and buzz for about three seconds.

Let the mixture sit for 10 minutes to hydrate the flour.
Add 1 and a half teaspoons of olive oil and 3 quarters teaspoon of salt, then buzz for 30 to 60 seconds until it forms a sticky ball.
Knead the dough on a lightly oiled counter for about 1 minute, then shape it into a ball and place it in a lightly greased bowl, covering it with plastic wrap.
Let the dough rise at room temperature for 2 to 2 and a half hours until it has almost doubled in size.
Prepare the sauce by blending 14 and a half ounces of diced tomatoes, 1 teaspoon of extra virgin olive oil, half teaspoon of dried oregano, half teaspoon of sugar, quarter teaspoon of salt, eighth teaspoon of pepper flakes, and eighth teaspoon of black pepper for 30 seconds until smooth.
Set the sauce aside; it will not be cooked.
Shred 1 cup of mozzarella cheese and combine it with sharp cheddar cheese (exact quantity not specified).
Grease two 9-inch dark-colored cake pans with 1 and a half teaspoons of extra virgin olive oil.
Divide the dough in half and roll each half into a 10-inch round, making sure to leave a quarter inch lip going up the sides of the pan.
Add a third of a cup of sauce to the center of the dough and brush it around to the edges.
Add the cheese mixture, ensuring some cheese goes up the sides for a lacy fried cheese effect.
Bake the pizza in a preheated 500°F oven on the bottom rack for about 12 minutes, rotating halfway through.
Let the pizza cool for 5 minutes before slicing.
