Preheat the oven to 450°F.
Cover a baking pan with foil and place the tomatoes in the pan.
Bake the tomatoes in the oven for around 1 hour and 20 minutes until charred and soft.
Let the tomatoes cool down, then peel and cut them.
Drain most of the juice from the tomatoes.
Heat olive oil in a skillet over medium heat for 1 minute.
Add the tomatoes to the pan and cook until all the liquid has evaporated and they become dry, stirring frequently for about 20 minutes.
Add honey, orange blossom water, cinnamon, salt, and pepper to taste.
Sprinkle toasted sesame seeds over the tomato jam and serve warm or cold with bread and crackers.
